My understanding is that a SBR is a rifle with a folding or collapsible stock. Now, does a 7.5in AR Pistol with a KAK Brace with a folding stock (Law tactical) considered a SBR?

Nope. A pistol is a pistol, folding buffer tube or not. Don't say folding "stock". A brace is not a stock, otherwise it would in fact be a SBR.
