vortex mount 2 inch or new 3 inch offset for flattop Uppers ?

Im probably buying that 1-8 strike eagle just to goof around with it. Vortex originally made the 2 inch offset, later made a 3 inch.

    Which to get and why?

I'm assuming you're talking about a scope mount for a 5.56 frame AR which has a short receiver. The 3 inch offset allows the shooter to push the scope further forward. This gives the shooter a wider range to adjust the stock for an LOP that's comfortable.

The more to the rear the scope is, the longer the LOP needs to be to set the eye relief. The longer the LOP, the further the shooter has to reach to the trigger

Since I don't like my stock fully collapsed I prefer the 2" offset version.

Be worth asking Vortex and including some information on your cheek weld (nose to charging handle or distance from the charging handle to your eye). If that doesn't work, you can always slide the 3" to the rear easier than the 2" forward.

Pick your scope out, get dimensions, get eye relief spec, hold gun and measure distance, and figure out where the scope needs to be, then figure out which mount will put it there.

I had the same dilemma (larue mounts) and it worked out as planned.

With the strike eagle its going to sit pretty much where my viper is in the pic above. Thats an adm recon mount I have and I can go in either direction where it is. I like the eye relief where it is best
