All things considered they're going to be roughly equal. The .300BLK may have slightly less port pop due to lower chamber pressure but sonic crack is going to be about the same and the actual report from the muzzle will depend on the suppressor more than anything else. It's not fair to compare the two directly in terms of muzzle readings because you can't use the same suppressor to test both without using a .30 cal can for the 5.56 which will naturally put the 5.56 at a disadvantage because the can is overbored for that round.

My SBR 5.56 is much louder (to my ears) than my SBR 300blk, both through an AAC 762-SDN-6.

I agree. 5.56 sounds louder to my ears than 300Blk supersonic. Both suppressed and not.

All things equal, shouldn’t the slower bullet be louder(the sonic boom), assuming supersonic?
For the shooter port noise is going to be the major factor.
