Working pressure?

Is everyone pretty much loading their 5.56 round to 55,000 PSI, or some other pressure?

I think most of us probably don't have a clue -- don't have the equipment to measure

(and how are you measuring?)

My guess is most handloaders load to a velocity or for strictly accuracy. I bet most of the ammunition handloaded is in the mid-range of the pressure curve. Ammunition manufacturers usually load to a specific pressure. The average handloader won't have access to pressure testing equipment.

Yes, that's correct, but there are pressure signs one can measure to remain within safe limits. Various places on the case.

By the time you see pressure sign from a case head or reading the primer, you're already over SAAMI MAP. Just because you aren't getting visual signs doesn't mean you aren't over pressure.
