I have been reading and enjoying all the stickies written by the Doc.
I tried searching but did not get much luck about the best terminal ballistics for 357 mag ammo.

Has any FBI protocol tests been done for the 357 mag cartridge?

Lots of them, I don't know if any are here, but I know Firearms Tactical has some testing posted.

Yes, but since very few agency use .357 Mag anymore, most of the tests are from the 15-20 years ago...

Having read Dr. Roberts' info regarding the .357 Mag (and greatly appreciated!), if I am intent on using .357 Mag for CCW, would you find acceptable the use of the 180gr Winchester Partition Gold in either a GP-100 (4") or an SP-101 (3")? Thank you.

The Win 180 gr Partition Gold will work; so will the Speer 158 gr Gold Dot, and loads using the Barnes all copper bullets...

I posted some info on another .357 thread on this forum. The 145gr Silvertips did well also, would be a good choice for carry ammo.

I'm using the Winchester 145 gr ST, and/or the Corbon 125 gr Barnes XPB load in my .357 magnums.

I've always had a few boxes of Winchester 145 gr. Silvertip around and it shot great in my 4" model 66 and 686. I shopped around the other day for an extra box or two and finally ordered from Midway at $50 per box. The price on that stuff is rediculous now.
