I'm thinking of getting a p2000sk, but what's the trigger pull difference between the lem v1 v2 v3. I'd like the pull to be the lightest I can get it.

V1 s lighter than V2 and either can be converted to light LEM with the proper spring set. I'll post the springs required in a few minutes after some research. V3 is DA/SA.

Buy either V1or V2 then purchase these springs. I replaced mine, but the TRS can be a royal pain until you do it once. HK will do it for you if you order one in light LEM. Or you can send an already purchased pistol to them for conversion.

Here you have official specification on P2000 triggers (P2000SK is same):

Basically lightest triggers are V3 (SA/DA), V1 (LEM) and V0 (LEM/DA - only for Europe). Take in mind that V3 is not suitable for carry cocked, so first shot is heavy DA. V1 offers light pull on every shot, but with long pre-travel on first shot.

So the pull weight is 51nt, but if I chock it first, it's 21nt correct?

Correct. 51N (11.5lbf) is for DA trigger pull. When hammer is cocked pull is 24N (5.4lbf). Actually my experience is that SA trigger pull usually is below 5lbf.

Doesn't V3 have a safety/decocker, so you could carry in SA (cocked) w/safety?

No, P2000SK V3 does not have safety. It only has de-cocker button.

You probably mistook this with HK P30S V3 or P30LS V3, that has both thumb safety and de-cocker button and is suitable for C&L carry.

Remember that trigger variant numbers of P-series are not same numbers used for USP/C and HK45/C series.

Yeah, I'm only familiar with USPs, and I wasn't sure if the trigger versions were all the same. Thanks for letting me know.
