I haven't been able to shoot a long gun for several years due to multiple spinal surgeries which have now left me fused from skull to tailbone. I'd like to get back into recreational shooting or even hunting. So here's my question:

Is it possible to stack rails to bring a red dot sight to my eyes now that I can't align my head with the sights while keeping the rifle seated properly on my shoulder?

Here is a very crude example (forgive me - best I could do on my phone to illustrate the point):

A stock that has a longer toe and a 2.04" mount may be a good way to go.

Anything is possible, re. your question.

But, for the sake of discussion say you fabricate a 4” mount to accomplish your situation.
A problem you may be overlooking; The now taller scope needs more down elevation to zero, so there is more up elevation available for long range targets.

You may have a difficult time finding an optic with enough adjustment to function with that high/tall of a mount/scope set up.

Yes, it absolutely can. A riser attached to a high mount would be more than enough I believe. Think of the riser from pic one, with the mount from pic two.

Unless I'm doing it wrong XM193 zeroed at 50 with a 4 in sight height, max come up was -2.8 moa at 200 and plus 6.20 moa at 500 yards @ G1.

Surprised me.

Here is my logic, if I zero @ 50 yards with a 1.5 sight height and then without making any click changes place it on a riser that equals 4 inches sight height, the bullet should strike 2,5 inches high at 50 yards.

So doing the math at 50 yards each moa will move the strike of the bullet 1/2 inch. So we need to move the strike of the bullet 2.5 inches more at 50 yards with a 4 in sight height than we would with at 1.50 inch sight height. with a 1/2 moa per click optic that means -5 clicks difference using 4 inch sights compared to the 1.5 inch sights.

At 200 that means -11 total clicks compared to zero with a 1.5 height; at 500 that means 7 clicks total. I think most optics have that range of clicks.

Does that make sense? Somehow I think I'm missing something.

How high do you need to come up? I've stack rails before, but there are night vision height sights which are almost 2".

Seems like a good application for a Unity Fast Mount or a KAC High Rise. The former is 2.26” and the latter is 2.33”.
