View Full Version : So what do you know about a home pizza oven?

I really need good pizza and unfortunately for me I am in a pizza desert.
I can't find good pizza, let alone good resonablly priced stuff, so I'm ready to build a pizza oven.
Have you seen a Mexican Chimnea? Could a Guy with a good saw actually cut one and turn it in to a pizza oven?

Couple of cheats, you can use frozen bread dough as a crust. Just thaw and oil and let rise.

Cheese, it won't come from the supermarket. You need to find Grande.

Pizza sauce, you are gonna either need to find a jar of something you can live with or learn to make from scratch. In a pinch I can do Newman's marinara.

Ooni is a great place to start. We have one and love it! You can make great Neopolitan/New York/New Haven style pizzas in it. Plus it’s only about 50lbs and portable.

Same around here, I don't what some folks standards are but all of these places with Italian names suck balls. The best place otherwises has been Bocca Lupo, coal fired, always good. This is SW Fl.

Look up some simple stacked brick pizza oven designs before you do anything crazy with a saw.

My parents are Sicilian, my father a second generation American and my mother immigrated here when she was 10 years old. Needless to say I grew up eating real Italian food every day including the best pizza in the world ;), which was cooked in our regular old kitchen oven. The key is the homemade sauce and dough. Learn how to make those two and you are golden.

I agree. The sauce and dough are key. My wife was born and raised in south Italy. Her sauce is very simple, typically made with Cento canned San Marzano tomatoes. We purchased a big bag of imported Caputos pizza flour and she makes the dough from scratch using that.

We have an outdoor wood fired oven that I bought off a local guy who posted it used in the classifieds. In the winter we use the indoor range set at 500. There is a difference in taste and texture but it is still good.

When I spent time in Sicily (mostly Catania) I was disappointed in the pizza. Perhaps my expectations were too high. Anyway, I used to own a pizza restaurant as well so have some experience.
The advice above with San Marzano tomatoes is sound. Yes, they do make a difference. The Sauce and crust are 75% of what makes a good pizza. Use 000 flour in your recipe. It goes without saying to use quality ingredients. Make them as dry as possible. Use skim milk mozzarella (less grease). Also the small round pepperoni is good. It curls up and has a tasty crispy edge.
I have an Ooni and like it very much. It does take some practice to master.

The advice above with San Marzano tomatoes is sound.

Anyone want to share a recipe? I have a good one for marinara but it isn't exactly a pizza sauce.
