For those that use an ACOG that has the fiber optic pipe, what have you used to cover the fiber optic other than duct tape in bright sunlight to dim the reticle?

Black gaffer's tape. This is what movie crews use to tape wires/cables to walls, floors, etc. Looks like duct tape, but tears off easily with your fingers and doesn't leave the sticky glue residue behind. They make it is various widths and colors too.

+ 1 to Damian's recommendation.
I use a Mountain bike Tire Inner tube (2.5") and custom cut it to fit around my TA-11. Works great,
Cheap
Easy to pull back to get more ambient light
Provides a little extra protection from dings and dents.

I've been toying with the idea of making something out of kydex, but I never can seem to remember to order the damn kydex to do it with.

Here ya go. You can custom fit it by using a x-acto knife and trimming around the differnt parts of the scope. And the beauty of it is ... it's a very cheap solution that if you screw it up, you just start over.

What less light, keep fiber optic covered... want more light..pull it back.

And no sticky adhesive residue on the fiber optic from duct tape or electrical tape after a hot sunny day....

That looks great.
However, I have a TA31/RCO ACOG and the front of my scope doesn't extend to the end of the LaRue mount.
Got no scope to hold the inner tube on the front side.
