I have an old Benelli that I would like to have professionally refinished. Any recommendation as to who is the best in the business?

As much as I hate to say this, I believe the best guy for the job is mark at Arizona Response Systems... I believe before HKUSA was up and running, he had the contract to do their warranty refinishing here in the States...
