I only have about 300 rounds through that rifle since adding the folding adapter.. That said, I've had no problems with it whatsoever.

You might also want to check out sneaky bags. Im not sure on the size of there packs, but they are similar to the eberlestock. Im not sure about the quality, but with eberlestock you know your getting one of the best made packs available. Going with the folding stock and one of your 14.5s seems like the best idea. Using the 14.5 you dont have to be picky about your ammo selection.
The Sneaky Bag 30" CRB would be a less expensive option than Eberlestock, but looks a bit less like a laptop bag and more like a tennis racket bag or some such. In fact, the Eberlestock is set with separate "public" and "private" pockets - so you could put a laptop in the sleeve of the "public" one while hiding the rifle in the "private" one, and actually produce a laptop if somebody asked (if you wanted to carry the extra weight). Like all things Eberlestock, though, $$$ (but as you say, one of the best made).
Have you guys never seen the 5.11 Tactical Select Carry Sling Pack???
My friend works for 5.11 and gave me one. Give you instant access to a full sized pistol AND SBR. My Glock 17 and LWRC UCIW fits perfectly. Needs to be a small SBR though, I believe it was made for an MP5.

I prefer the tennis bag. Colt 6920 ready to go in about 15 seconds. Its a little tight but not too bad. Granted it doesn't have any internal attachments but they are cheap and lot of different options. Plus I still use mine for tennis racquets. :D

It's stealthiness depends greatly on whether you look like somebody that would play tennis, and even if you look it you'd better be ready to engage in convincing conversation with a real tennis player if you are not. Unfortunatly, I've never been on a tennis court in my life, nor even watched a match.
I do carry a computer backpack to & from work 5 days a week, and have a different one for my personal laptop (somewhat bigger than the work-issued one) that I carry one personal travel. Almost everybody I work with carries one, too. I was almost the last holdout still using the old school briefcase-shaped laptop bag. I would feel well concealed walking around with a weapon something that passes for the computer bag I carry all the time anyway. If anything, the S25 misses only in that it isn't solid black (the most common computer backpack color), but it's still OK because there's no molle on the outside.
Your OP stated that this setup would be for a SHTF type of "lawless" scenario...
If that's really the case, I assure you, no one is going to be stopping you to chit chat about tennis or anything else.
Nor is anyone going to be concerned about what color your pack is.
If it's not about that, carrying an AR around concealed on your person in whatever pack you want is an extremely bad idea, and a fantastic way to get 3 free meals a day..
If it's a "truck gun". Leave it in the truck until your using it for lawful purposes.
