Grip size and shape drive a few things:
Direction of pull on trigger.
Placement of finger on trigger.
Placement of thumb on selector.
Reduce interference of ambi levers on trigger finger joint.
Reduce friction of knuckle on trigger guard ears.
Align wrist with forearm, change interaction angle.

I'd like to see a good write up. Most LGS don't have several to choose from. One close has hogue. Another carries magpul stuff. Of course nothing works like trying out, and lots of use. I guess it can vary on stock selection and length of pull too. Good thread for fools like me who haven't had the slightest.
I use BCM Mod 0 and Magpul MOE-K grip. I have medium size hands - anything with beaver tail slows me down on manipulating the safety and increases reach for mag release.
After reading g replies, I'll probably go with the bcm. I put a mod 1 on a friends rifle and like it, so I'm sure I'd love the mod3.
As said, the way your body is built makes a huge difference. I have big hands and long arms. Even with an m4 stock fully extended, I feel it could be a bit longer, so take it for what it's worth.
I switched to the K2 when it came out, but now I think I'm going to have to look at the Mod3. I like the K2 more than any other grip I've tried, but the acute hump leaves my hand in no-man's land sometimes and it just gets uncomfortable. Love the angle though. Is the Mod3 a similar vert angle?
The BCM Mod3 is very similar in angle to the MOE K2. The K2 has slightly more trigger reach. They are roughly the same size in circumference. I've experienced the awkward bump on the K2, but the Mod3 doesn't have enough trigger reach for me, so I've mostly gone back to the original MOE.
And personal preference. I have 2XL hands and a 36" sleeve length, and yet I run my stock around A1 length, or shorter with heavy clothing or shoulder straps. I originally liked the Mod1 and Mod3 well (I tried each one as they came out), but later decided they were too small for me - mostly too little reach to the trigger. I also don't regularly wear body armor and I tend to use a somewhat more classical stance when standing vs. squared up, and I do a fair bit of shooting from unsupported prone and find the nearly-vertical grips to be not as good for that position when compared to the conventional angle (A2 grip, original MOE). YMMV and that's why there are so many options, with, in my opinion, no option that's right for everyone.
I thought the same thing, until I installed a Magpul grip with the "beaver tail". I like it, most of the rifles have em now!
Definitely helps with the trigger reach. It sounds silly to some, but I've always found the AR to be almost un-shootable with a stock grip. Hurt my wrist, and just was generally awful. That's the first thing I do on any AR I pick up.
