I own a SA MC Operator. Im at about 2000 rounds through it right now. Ive owned it for 4 years now. My father in law owns a Colt Commander. I love both guns, but I get hammer bite shooting it. Personally I need some kind of beavertail on pistols, I get slide bit from the P2000 I had for work.
Back to the GI model 1911, dude if it works for you, use it. Personally I prefer some type of high visibility sight, a beavertail, and a maxwell. Other than that, if it feeds your S.D. load reliably, and shoots accurately, why change stuff.

I love spartan GI-style 1911s, preferably with the WW I style (M1911 not M1911A1). I would carry one that is of quality components, properly fit together. However for extended practice sessions and competition, I prefer a more modern 1911 with a beaver-tail grip safety, extended thumb safety that I can ride with my thumb, and modern sights.

I have 10 of them that are all pretty much in GI configuration. I do carry several of these (mostly in the winter.) I like "simple," and I don't like extended beaver tails, safeties, etc.

I saw a milspec at a gunshop today, it's a stainless model so I didn't grab it but over all the fit and finish was way better then I expected. Springfield has really stepped up their quality over the past couple years. Had it been the parked model I may have snapped it up. The one negative was that grip safety had super sharp sides. I'd have to smooth down the side closest to the thumb. Has anyone found the Colt beaver tail to be any more rounded on the basic series 80?
