To answer the OP's second question more directly.... With a 100yd point of aim/point of impact zero, @ 25yds your point of impact will be Approx. (-1.47") low. @ 50yds your point of impact will be Approx. (-0.7") low, and @ 75yds your point of impact will be Approx. (-0.2") low.

That OP is like the reading comprehension test examples. He starts out about high-bore and then goes to red-dot only. I should have just answered "c".

So am I correct after reading all of the charts etc.. that basically if you zero 2" low +/- at 25 yards, that it will give you a good zero out to 200?
Or am I reading the numbers incorrectly?
More like 1-1/2" below POA/LOS, according to most of the arcs described here.
I suggest taking your rifle out and zeroing it at your chosen range and learning and understanding that zero. Shoot at 10, 25, 50, 75 yards and learn firsthand what your holdoffs are. Charts are nice but nothing replaces actually *knowing* your zero.
