I've had both. The new SA Pros have fully ramped (Wilson/Nowlin ramp specs), SA barrels. The feed ramp angle is too steep on these barrels and you will likely find that the gun will run much longer without feed way stoppages if you have the feed ramp angle increased. If you poke around the internet a bit, you'll see that a certain fed agency has this mod done to the guns it issues.
Most Wilson guns have the standard JMB barrel ramp- they work very well. My CQB was extremely reliable and well put together. Unfortunately, I had to increase the feed ramp angle on my Pro before I could get it to go 1000 rounds without a malfunction.
My two cents-
So, after my initial debacle with my Springfield Pro jamming every round (admittedly purchased for $900 at a gun show) it went back to SA, on their dime, and came back to me shooting 99%. I replaced the magazine springs and it's been 100% reliable in the 2500 rounds I've shot since. Not a single failure. I LOVE this weapon. It was manufactured in 2002 and has the Nowlin barrel. It's not ridiculously tight anymore, but it's the smoothest, softest shooting, most accurate 1911 I've shot.
I do love the feel in hand of the Nighthawk/Wilson guns but haven't gotten around to picking one up yet. I'm currently thinning down the collection and if I can sell the weapons I'd like to get rid of, I may pick up a Wilson or Nighthawk if I can find one at a reasonable price.
I have owned a railed CQB and currently own a non-rail Pro. Both guns exhibited 100% reliability. It really comes down to which gun YOU want. If you can swing the scratch, get them both. I own a Wilson UT-15 and Wilson/Scattergun Tech 870, so really feel like I need another CQB to complete the "Triad."

Wilson parts are better, Wilson's stock sights are better. I'd go Wilson.
Theoretically, but the only time they went head to head, Wilson tapped out and the professional was shown to be the more durable and accurate gun..
My conclusion, the Wilson may have more style smoothness, and beauty, but SA proved it was tougher and more accurate
That's crazy talk. Plenty of reasons why Wilson wouldn't want the FBI contract. I own Springfield and Wilson.
Are you familiar with the fbi 1911 tests? If I recall correctly, the professional is the most tested 1911 of all time, including the original, and I'd ask if there was any handgun ever that went through more testing
