What can I do with this? My only hesitation is that the pistol grip configuration is factory lol. Leaves room for a future AOW (vs SBS). "Supposedly" putting a stock on it eliminates the ability to AOW it later, forcing an SBS set of paperwork.

Yeah that won't be ideal at a match.Put the pistol grip in a parts box and throw a stock on it.
That would be a great starter shotgun.

Shotgun is a Winchester Super X 3, 26" barrel with a Briley extended bolt and tube (can hold 9 2 3/4"). Light polishing on the bolt and lifter, stock lengthened about 1 1/2". HiViz recoil pad and large green fiber front. Although it's a glorified duck gun, I like this gun a bunch more than the Benellis I've shot.
Pistol is a CZ Custom Shop 75 Shadow. S/A pull is about 3.5lb. Run with either Mec Gar 19 round mags, or a homebrew of a 18 round CZ mag, Grams Guts, and a Pachmayr base pad that holds a total of 22 rounds. Grips are VZ's.
Rifle is a home built around a Nordic 18" rifle gas barrel. BCM upper/bolt/charging handle, CMC flat trigger, Troy Alpha Extreme Rail, DPMS "Jerry" comp, MIAD grip and a standard RRA A2 stock. Optic is a Burris MTAC 1-4 in a PEPR.
Rest of the gear is a Mark Otto "Load 2" belt, DAA comp belt with 2 CR Speed mag pouches, Blade-tech AR pouch, and a Blade-Tech holster. AR mags are always PMAGs, and I carry 4 30's, 2 20's, 2 40's, and a coupled 30 around in my shooting cart. Overkill, but I've used them all before in different stages.
Very pleased with this setup. At least the shotgun and pistol are different from your standard 3 gun fare, but they work very well for me.

The tax for manufacturing an AOW is the same $200 as manufacturing an SBS. The $5 tax stamp is only for AOW transfers.What can I do with this?
