    20CV or Elmax have been faves to both use and sharpen the last couple years. Both have that good balance of properties that let them retain an edge for a long time, yet still being fairly easy to sharpen. Tried some of the 'harder' exotic steels, they'll hold an edge even longer, but can be really difficult to sharpen.

    M390 which is the twin brother from another mother of 20CV is awesome too.
