I carried an O1991A1 with nothing but a Harrison Retro rear and Novak dovetailed front sight.
Didn't bother me in the least. I prefer that setup over all the $3K+ customs I've had.

I have done so in the past I must be the odd one but I have never gotten hammer bite from a standard 1911 and never saw a need for a big beaver tail.
I do. I have an old USGI Remington Rand mix-master 1911A1 that's boringly reliable and I shoot it well...small GI sights and all. It's my winter time EDC. I use either Colt factory 7 round mags, 7 round Mecgar mags, or flush fit CMC 8rd. Power mags, and it's never given me any trouble. About every three years, I replace the recoil spring with a new Wolff 16lb spring, change the firing pin spring, and check extractor tension. I am thinking about retiring it in a few weeks when my tax-refund arrives and going with a new Springfield Mil-spec, or something similar, with easier to see sights. My eyes are not getting any younger.

Started with a DCM Remington Rand a LONG time ago. More 1911s came on board over the years; some stayed and some went. The oldest were made back in 1913; the newest is a LW Ruger Commander from a year ago. About the only "mods" I ever bothered with were sights I could see and a decent trigger. (I did NOT modify the 1913 guns; but the tiny knife-edge front sight and shallow U notch rears on them are a caution!) Personally I find the beaver-butt grip safety on the new guns annoying and unsightly, but impractical to change to old style.
Alvin York never complained about his 1911.

So long as you can see the sights, the trigger isn't horrible (LOL, a horrible 1911 trigger?), and it isn't cutting up you, your gear, or your clothing... I don't see why you couldn't run a more classic 1911 pistol. I would just make sure that it runs reliably with whatever ammo you're planning to carry in it.

I carried a Colt Government Model in the early 1980s. It was okay - never had any problems. These days when I carry a 1911 style pistol, I much prefer to carry my customized DW bobtailed commander.

Well, I carry a tuned SA Mil-Spec. It has some enhanced pedals and polished and throated slightly and is very reliable with every bullet type known to man. I left the front sight as it was and installed a Hilton Yam wide U notch, plain black serrated rear sight. The gun runs and I do very well with it. (it's not my first 1911) It's the third such gun I've put together having sold the other two to shooting friends over the past couple years. Several 1911 aficionados love the set up. But no, its not a GI model but it ain't fancy.
If I were to it would be slightly modded like SAMs
