"SEF" are the ones that say 'SEF' on them. They can be either steel or plastic. The plastic housing has the thumb rest. The steel housing has a plastic grip that has the thumb rest. It can be swapped out for an aftermarket plastic grip that does not have the thumb rest.
Generally, HK housings use letters - SF, SEF etc, pictograms (pictures of bullets) or numbers 0, 1 etc to indicate modes of selection. 'Navy' trigger housings are plastic with no thumb rest, have ambidextrous safeties, and have a larger safety axis hole. They're more complex due to some of them having burst (2 or 3 rounds) and are not compatible with non-Navy trigger groups (which do not have burst).
'Navy style' housings have the non-thumb rest grip like the Navy housing, but are not compatible 'real' Navy trigger groups as they have the smaller hole for the safety axis and are compatible with all non-Navy trigger groups (semi auto, SEF etc). There are exceptions as there are so many variants, so this is just in general.

Thanks! I think I got it now.
Is the steel housing a better weight balance than the polymer ones?
How does the Zenith fair in these comparisons?

Zenith uses polymer SEF housing on their MP5 clones. Navy ambi housings make much better sense given that it is 2019 and not 1979. When I bought my Z5 rifle last year, the first thing I did was buy a German FBI Navy style housing with a US made trigger pack from HK parts. Ergonomics are much better, and it is easier to switch the safety on and off without having to move your hand off the grip like you have to do with a SEF housing
