Then covid hit and I did some research and found out that it's really really hard to OD on vD so I started taking more. Right now I take 8000 IU and have been for about a 6 months.

I know somewhere I'm getting my IU wrong because originally I was buying 1000 IU bottles then switched to 2000 but since about Christmas time I've been taking 4x2000 IU daily.

5k IU seems to be the starting dose for most, 10 even 20k IU, not uncommon to get levels where needed, and there's racial differences there also. Best way to dose, always, is via labs, or it's all a WAG. Best article on that topic:

Important and interesting article on the potential value of various compounds to combat covid. One identified, not surprisingly, was lactoferrin (LF), which I first wrote about over 20 years ago. This was an invitro screening method, but taken with the additional ever growing data on LF, highly promising finding:

“The team validated the 17 candidate compounds in several types of cells, including stem-cell derived human lung cells in an effort to mimic SARS-CoV2 infection of the respiratory tract. Nine showed anti-viral activity at reasonable doses, including lactoferrin, a protein found in human breastmilk that is also available over the counter as a dietary supplement derived from cow's milk.”

"We found lactoferrin had remarkable efficacy for preventing infection, working better than anything else we observed," Sexton said. He adds that early data suggest this efficacy extends even to newer variants of SARS-CoV2, including the highly transmissible Delta variant.”

Is there lactoferrin in greek-style yogurt, and is the quantity significant?

You'd have to eat gallons of it at best to get multi gram doses recommended/used in studies. Quality whey contains 0.5-1% LF for example. There are benefit to eating yogurt gut health and immune wise.

Jarrow is generally a solid company and among the handful I use/recommend. My default company for most things is Life Extension, as I have done consulting work for them, know the owner, and have written various articles for their mag, including those on LF and such.

    LEF
Jarrow (although they were recently sold BTW)
    Nutra Bio

Are go to companies for me.

I speak with Dr. Jimmy Gutman, who literally wrote the book on glutathione, and there could not be a better time to talk with him about this essential molecule. We cover whey, NAC, glutathione, and it's importance in viral infections, and much more:

Extensive review paper on possible benefits of Quercetin on covid and viral infections in general:

Quercetin: Antiviral Significance and Possible COVID-19 Integrative Considerations

First Published December 3, 2020 Review Article

    Abstract

Quercetin, a naturally occurring dietary flavonoid, is well known to ameliorate chronic diseases and aging processes in humans, and its antiviral properties have been investigated in numerous studies. In silico and in vitro studies demonstrated that quercetin can interfere with various stages of the coronavirus entry and replication cycle such as PLpro, 3CLpro, and NTPase/helicase. Due to its pleiotropic activities and lack of systemic toxicity, quercetin and its derivatives may represent target compounds to be tested in future clinical trials to enrich the drug arsenal against coronavirus infections. There is evidence that quercetin in combination with, for example, vitamins C and D, may exert a synergistic antiviral action that may provide either an alternative or additional therapeutic/preventive option due to overlapping antiviral and immunomodulatory properties. This review summarizes the antiviral significance of quercetin and proposes a possible strategy for the effective utilization of natural polyphenols in our daily diet for the prevention of viral infection.

Paper of interest. More a big case study than RCT, but interesting. zinc and zinc ionophores; vitamins C, D3 and E; and l-lysine. My personal assessment is without at least a GSH precursor, such as NAC, sub par. But, credit where it’s due for such an endeavor:

20-Week Study of Clinical Outcomes of Over-the-Counter COVID-19 Prophylaxis and Treatment
    Abstract
    Objectives and Setting.

As the lethal COVID-19 pandemic enters its second year, the need for effective modalities of alleviation remains urgent. This includes modalities that can readily be used by the public to reduce disease spread and severity. Such preventive measures and early-stage treatments may temper the immediacy of demand for advanced anti-COVID measures (drugs, antibodies, vaccines) and help relieve strain also on other health system resources.

    Design and Participants.
We present results of a clinical study with a multi-component OTC “core formulation” regimen used in a multiply exposed adult population. Analysis of clinical outcome data from our sample of over 100 subjects − comprised of roughly equal sized regimen-compliant (test) and non-compliant (control) groups meeting equivalent inclusion criteria − demonstrates a strong statistical significance in favor of use of the core formulations.

    Results.
While both groups were moderate in size, the difference between them in outcomes over the 20-week study period was large and stark: Just under 4% of the compliant test group presented flu-like symptoms, but none of the test group was COVID-positive; whereas 20% of the non-compliant control group presented flu-like symptoms, three-quarters of whom (15% overall of the control group) were COVID-positive.

    Conclusions.

Offering a low cost, readily implemented anti-viral approach, the study regimen may serve, at the least, as a stopgap modality and, perhaps, as a useful tool in combatting the pandemic.

Per my article below (1), which focused on the importance of mitigation of ROS, from the very beginning of the covid outbreak, papers continue to pile up now as more researchers begin to realize ROS is a key driver, perhaps the key driver. In this paper, focused on hypertension, it’s outlines some useful pathways etc:

“ROS are signaling molecules that exert critical biological roles. Conversely, dysregulated ROS production, leading to oxidative stress, contributes to the pathophysiology of several diseases, including hypertension.”

This is a recent review paper of interest worth reading also taking a larger view:
Elucidating of oxidative distress in COVID-19 and methods of its prevention

    Chem Biol Interact . 2021 Aug 1;344:109501.

The pandemic of SARS-CoV-2 stimulates significant efforts and approaches to understand its global spread. Although the recent introduction of the vaccine is a crucial prophylactic step, the effective treatment for SARS-CoV-2 is still undiscovered. An in-depth analysis of symptoms and clinical parameters, as well as molecular changes, is necessary to comprehend COVID-19 and propose a remedy for affected people to fight that disease. The analysis of available clinical data and SARS-CoV-2 infection markers underlined the main pathogenic process in COVID-19 is cytokine storm and inflammation. That led us to suggest that the most important pathogenic feature of SARS-CoV-2 leading to COVID-19 is oxidative stress and cellular damage stimulated by iron, a source of Fenton reaction and its product hydroxyl radical (•OH), the most reactive ROS with t1/2-10-9s. Therefore we suggest some scavenging agents are a reasonable choice for overcoming its toxic effect and can be regarded as a treatment for the disease on the molecular level.
