Back in the day, people used to "season" a new cast iron skillet by coating it with cooking oil and heating it in the oven or on the stove for a period of time. Not sure if this was to seal the pores (and help in corrosion resistance) or as an aid to cooking.

Still do it that way and that is what makes it non-stick. Some come preseasoned that I assume is done in a solar manner, but it isn't uncommon for people to sand that down to get a smoother surface finish and reseason.
