for me the application would be for hunting and hiking (an extension of hunter safety i guess). i love hiking and am thinking of going on some extended trips this year.

sigarms teaches them also survival classes
I believe the guy who writes for SWAT, Jeff Randall, may provide some domestic training that involves land nav and survival. I know of a guy who does it in Missouri. If you are interested please PM me.
We teach one at LRI but it's an extension of the long range shooting and stalking class we offer.
If you have something like a local REI they are very likely running something out of there. Are you more interested in working a GPS or map and compass?
Do a search for "adventure racing" in your area or local outdoors stores. I know they offer them here in eastern VA a few times a year because in order to do an adventure race you have to know how to navigate. The one I attended was free because I was on a team that was registered for a race.
It's been a while for me, but these people offer a really good land-nav training class.

One method may be to find a local geocaching club or organization in your area. They often give classes and training for free to new members.
