I have a new spare LMT .308 bolt. Will this work as a spare for the KAC SR25 ? I was going to build a LMT MWS and sold off most of the components. Should I keep the bolt as a spare for the complete KAC SR25 ?

It will be fine to use as a spare. A Knights bolt would be ideal, but KAC states a bolt is acceptable
