I have used Don Williams at the Action Works and George Smith at EGW. Both are as good at wrenching on guns as anyone else out there. I haven't used but have heard really good things about Scott Mulkern of SDM Fabricating, Marc Morganti from Gemini Custom and Jim Garthwaite from friends that have. Depending on what you want done expect to wait a couple of months.

What work do you need done? If it's simple stuff I can recommend the Springfield Armory custom shop or Evolution Gun Works. Both should do excellent work and have cheap prices and fast turn around times.

Bob Rodgers does excellent work. He's not currently taking on any major build projects, but still does things like mods., maintenance and reliability type jobs.

Where are you? It's never a bad idea to support a local smith, and you can carry the pistol there in person, and show them exactly what you want.
I had a 1911 worked on by Ken Crawley here in Texas, and he does excellent work. Reasonable prices, good turnaround time, and a pleasant man to deal with.

I use Wayne Novak's shop when I need "minor things" done on 1911's. Reliability jobs, trigger installs, pin installs and fitament, etc.
I would love to use a local guy but there arnt any! I live in Western NY. I used Benny Hill in TX for my slide but he does not do the other stuf I want.
I want my front strap checkered, mag well beveled, bevertail grip saftey, and a new trigger.
I am looking for someone that I can send it to and it will not be gone for a year. Benny has it back to you in a week.
