I have just started looking into a similar build, so I know nothing. When moving from a .223 R700 to a .300BLK, changing the barrel is basically the only change, correct?

Yep, just a barrel swap and possible recoil lug modification/replacement if your headspace is incorrect. Mine was within spec according to the headspace gages.
