The excessive heat & humidity in the garage will shorten the life shelf. Anything over 75 degrees is not ideal. If you can open windows in the garage get some air flow to let the heat out would be better. I wouldn't be worried as much about the humidity if they're properly sealed in mylar bags and you have a desiccant pack (for moisture) & an 02 absorber for oxygen in them prior to sealing as much as I would excessive heat. As long as it's not getting over 85 degrees I wouldn't be too worried.
My garage here in south Florida, even in the brutal hot summers only gets to 82 degrees since it's in the shade of a roof. Monitor the temp. If it gets over 85 I'd make other arrangements or cut the shelf life in half. I can tell you from experience I've had buckets of red winter wheat & rice stored for 12 years at around 80 and I opened them up this year and they're good as could be. I ground up some of the wheat and made bread and it was delicious.
I make my own desiccant packs by going to a craft store and in the flower section you buy a box of silica gel that is used to make dried flower arrangements. Then get tea bags. I buy the large family tea bags (twice the size of normal tea bags) take the staple out, dump out the tea and use a teaspoon to fill the tea bag with silica gel. Re-staple a few times. Toss it on top. I use these for my ammo cans as well. Keeping your own supply of silica gel & tea bags you can make them anytime you need them, quick & easy.
If I open a ammo can a few times, I'll put the toaster oven on very low and toss the desiccant pack in the oven for a few minutes and reuse them.
ETA: I would also use some rat poison or traps in the area & monitor regularly for rodent damage. Be vigilant about this. Rodents can chew through chicken wire, concrete etc. You'd be amazed what they'll go through if starving and smell food. They can definitely chew through 2 food grade plastic buckets. You need to keep an eye on them. If it were me I'd make a quick check once a week minimum. They can get in garage doors no problems. I've seen it many times. Squeeze right in the smallest crack. If pets can't access the garage, I'd be proactive and put poison down. They'll go for that due to ease of access. You''ll head off any problems that way.
